W wyniku działań urzędowych Państwowej Inspekcji Sanitarnej wykryto Escherichia coli wytwarzające toksynę Shiga (STEC) w 4 z 5 badanych próbek Tatara wołowego z określonej poniżej partii. Zakażenie bakterią STEC może prowadzić do krwotocznego zapalenia okrężnicy lub znacznie rzadziej, bezkrwawej biegunki. W rzadkich przypadkach może wystąpić znaczne pogorszenie stanu zdrowia objawiające się, jako zespół hemolityczno-mocznicowy (ang. hemolytic-uremic syndrome, HUS) lub jeszcze rzadziej jako zakrzepowa plamica małopłytkowa.
